Obatzda is a Bavarian cheese dip typically made by mixing butter, paprika and brie cheese. Back in the day, cheese was very expensive in Bavaria and one had to get inventive when it came to making old cheese edible again.
The craze for this simple cheese mixture quickly grew popularity across Germany and became a favorite among the monks of Weihenstephan Abbey, a monastery in Munich, who would pair it with their favorite Weissbier (or as we like to call it, Hefe Weizen). Dating back almost 150 years, Obatzda is now considered a staple in many families of German heritage.
